Ingredients:
- 1 cup brown rice
- 200g chicken breast, diced
- 1 cup mixed vegetables (peas, carrots, beans)
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ginger, grated
- 1 teaspoon turmeric powder
- Salt to taste
- 1 teaspoon olive oil
Method of Preparation:
Cook the brown rice as per package instructions.
In a large pan, heat olive oil. Add chopped onion, garlic, and ginger, and sauté until fragrant.
Add the diced chicken and turmeric powder. Cook until the chicken is no longer pink.
Add mixed vegetables and cook for another 5 minutes.
Add the cooked brown rice to the pan, mix well, and cook for another 5 minutes. Add salt to taste.
Serve hot.
