Ingredients:
- 1 cup whole wheat noodles
- ½ cup shredded chicken or tofu
- ½ cup chopped spinach
- ¼ cup chopped carrots
- ¼ cup chopped bell peppers
- ¼ cup chopped onions
- 2 garlic cloves, minced
- 1-inch ginger, minced
- 4 cups vegetable broth
- Salt and pepper to taste
- ½ tbsp olive oil
- 1 tsp soy sauce
Method of Preparation:
Heat oil in a pot, add onions, garlic, and ginger, and sauté until fragrant.
Add carrots and bell peppers, and cook for 5 minutes.
Pour in the vegetable broth and bring to a boil.
Add shredded chicken or tofu, and cook for 5 minutes.
Add noodles, spinach, soy sauce, salt, and pepper. Cook until the noodles are done.
Serve hot.
